This is a new classic. Its good to have in your back pocket for a special touch to any meal. You can use plant feta which is more available these days.

Ingredients
- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 1/4 cup minced shallots (1 large)
- 1 Tbps honey
- 1/2 cup olive oil
- 1 tsp kosher or any salt
- 1/2 teaspoon freshly ground black pepper
- 6 cups baby arugula, washed and spun dry
- 1/8th seedless watermelon,cut in 1-inch cubes
- 12 ounces plant or real feta cheese, 1/2-inch diced if real in block
- 1 cup (4 ounces) fresh mint leaves, julienned
Instructions
Wisk orange juice, lemon juice, shallots, honey, olive oil, salt, and pepper in small bowl or shake in a mason jar.
Put arugual, watermelon, feta and mint in large bowl. Toss with dressing just before serving.
