Perfect for a party, these little guys deliver. Pull out a carbon footprint food calculator and brag! The lentils and brown rice can be made ahead and kept frozen. It really makes the recipe come together quickly.

Ingredients

  • 1 1/4 c cooked and cooled brown rice
  • 1 c cooked brown or green lentils
  • 1 c shredded beets (use a food processor if available)
  • 1/2 c bread crumbs
  • 3 T finely chopped onion
  • 2 cloves garlic, minced
  • 2 Tbsp smooth almond butter (often found near peanut butter)
  • 1 tsp dried thyme
  • 1/2 tsp ground fennel
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • Fresh ground black pepper
  • extra virgin olive oils for the pan
  • Small burger buns
  • Toppings - shredded lettuce, sliced dill pickles, sliced onion, ketchup, vegan cheese, thousand island dressing (vegan mayo + ketchup or chili sauce)

Instructions

  1. Combine rice, lentils, and beets in food processor, pulse 15-20 times. It should look like ground meat.
  2. Put in large bowl and add bread crumbs, onion, garlic, almond butter, thyme, fennel, mustard, salt, pepper and combine well.
  3. Create your diameter of choice (I used a 2 1/2" cookie cutter) ,  about 1/4" thickness.
  4. Pour thin layer of olive oil into pan. Cook about 10-12 min, flipping occasionally. Burgers should be charred at edges and heated through.
  5. Alternatively, bake in oven at 375 for 8-10 min per side, then use broiler to toast each side.
  6. Serve on small buns with all your favorite toppings!
