Broccoli, Potato and Cheese Soup

Ingredients
- 1/2 cup raw cashews
- 1 cup boiling water
- 3 tablespoons margarine
- 1 yellow onion, chopped
- 2 large carrots, sliced
- 2 yellow potatoes, diced
- 2 small heads of broccoli, rough chop stems and florets
- 2 cloves garlic,minced
- 4 cups of vegetable broth
- 8 slices of plant-based cheese like Chao
- Kosher salt and pepper
Instructions
- Soak 1/2 cup of cashews in 1 cup of boiling water for 1 hour . Drain the water and then readd 1 cup of fresh water. Blend on medium speed for 3 to 4 minutes until a smooth cashew milk forms. Set aside.
- In a large soup pot, melt margarine. Sauté onions for 5 minutes. Add carrots, potatoes, and chopped broccoli stems. Season with salt and pepper and cook about 10 minutes.
- Add garlic and cook for another minute. Stir in the cashew milk and 2 cups of vegetable broth. Bring to a boil, then reduce to a simmer and cook for 40 minutes.
- Transfer the soup and 8 slices of Chao cheese to a blender. Blend for 2 to 3 minutes, being careful not to overfill the blender. Return the soup to the pot and add finely diced broccoli florets. Cook over low heat for 15 minutes.
- Add salt and pepper to taste
