Ingredients

  • 1/2 cup raw cashews
  • 1 cup boiling water
  • 3 tablespoons margarine
  • 1 yellow onion, chopped
  • 2 large carrots, sliced
  • 2 yellow potatoes, diced
  • 2 small heads of broccoli, rough chop stems and florets
  • 2 cloves garlic,minced
  • 4 cups of vegetable broth
  • 8 slices of plant-based cheese like Chao
  • Kosher salt and pepper

Instructions

  1. Soak 1/2 cup of cashews in 1 cup of boiling water for 1 hour . Drain the water and then readd 1 cup of fresh water. Blend on medium speed for 3 to 4 minutes until a smooth cashew milk forms. Set aside.
  2. In a large soup pot, melt margarine.  Sauté onions for 5 minutes. Add carrots, potatoes, and chopped broccoli stems. Season with salt and pepper and cook about 10 minutes.
  3. Add garlic and cook for another minute. Stir in the cashew milk and 2 cups of vegetable broth. Bring to a boil, then reduce to a simmer and cook for 40 minutes.
  4. Transfer the soup and 8 slices of Chao cheese to a blender. Blend for 2 to 3 minutes, being careful not to overfill the blender. Return the soup to the pot and add finely diced broccoli florets. Cook over low heat for 15 minutes.
  5. Add salt and pepper to taste
