Granola
Granola
My College friend, Kathy, brought this delicious granola to one of our early mini college reunions to go with our morning yogurt and fruit. I love that you can change the nut and dried fruit ratios and types of nuts and dried fruit and it still comes out perfect and a little bit different every time.

Ingredients
- 3 Cups old-fashioned oats
- 2-3 Cups coarsely chopped assorted nuts (almonds, pecans and walnuts work well, but macadamia nuts are interesting as well)
- ½ cup shredded coconut (unsweetened if possible, but sweetened works)
- 3 tablespoons (packed) brown sugar
- ¾ teaspoon ground cinnamon
- ¼ teaspoon or less salt
- ¼ cup maple syrup
- 2 tablespoons vegetable/canola oil
- ¾ cup craisins or raisins (or any dried fruit)
Instructions
- Preheat oven to 300 degrees.
- Mix the first 6 ingredients in a large bowl.
- Stir maple syrup and oil in saucepan over medium-low heat until smooth.
- Pour maple mixture over oat mixture, toss.
- Spread on ungreased baking sheet.
- Bake until golden, stirring every 10 minutes, for about 40 minutes.
- In the last 10 minutes, add the dried fruit to the baking sheet.
- Cool and store in an airtight container.
- I often double the recipe, using 2-3 baking sheets. The granola stays fresh in the airtight container for a couple of weeks.
