My College friend, Kathy, brought this delicious granola to one of our early mini college reunions to go with our morning yogurt and fruit. I love that you can change the nut and dried fruit ratios and types of nuts and dried fruit and it still comes out perfect and a little bit different every time.

Ingredients

  • 3 Cups old-fashioned oats
  • 2-3 Cups coarsely chopped assorted nuts (almonds, pecans and walnuts work well, but macadamia nuts are interesting as well)
  • ½ cup shredded coconut (unsweetened if possible, but sweetened works)
  • 3 tablespoons (packed) brown sugar
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon or less salt
  • ¼ cup maple syrup
  • 2 tablespoons vegetable/canola oil
  • ¾ cup craisins or raisins (or any dried fruit)

Instructions

  1. Preheat oven to 300 degrees.
  2. Mix the first 6 ingredients in a large bowl.
  3. Stir maple syrup and oil in saucepan over medium-low heat until smooth.
  4. Pour maple mixture over oat mixture, toss.
  5. Spread on ungreased baking sheet.
  6. Bake until golden, stirring every 10 minutes, for about 40 minutes.
  7. In the last 10 minutes, add the dried fruit to the baking sheet.
  8. Cool and store in an airtight container.
  9. I often double the recipe, using 2-3 baking sheets. The granola stays fresh in the airtight container for a couple of weeks.
