Overnight Breakfast Pudding

I’ve been looking for an easy, healthy breakfast dish, so I’ve combined chia pudding and overnight oats for a delicious quick morning food.

Ingredients

  • ½ cup of non-dairy milk. I use soy milk, but oat milk also works.
  • ⅓ cup old-fashioned oats.
  • 1 tablespoon chia seeds.
  • If you don’t use vanilla sweetened non-dairy milk, add ½ teaspoon vanilla or maple syrup.
  • ½ cup frozen berries (blueberries or raspberries or chopped strawberries).

Instructions

  1. Put milk, oats, chia, and optional vanilla or maple syrup in an 8 ounce mason/jelly jar and close with screw top.
  2. Shake vigorously to ensure all the oats and chia seeds are distributed throughout the milk.
  3. Place in the refrigerator overnight (for around 10 hours).
  4. Open jar in the morning and enjoy with blueberries, raspberries, your favorite fruits, and nuts.
