Sometimes we need a familiar flavor to highlight our favorite greens! The dressing is fantastic if you make it yourself- you'll never buy one again!

Ingredients

Dressing - ( See this video for best instructions! )

You can substitute  purchased dressing such as sesame-plum or an asian ginger dressing, but this is authentic and soooooo good!)

  • Fresh Ginger - generous piece (2 ")- peel and  rough chop
  • 1 Shallot- rough chop
  • 1/4 Apple peeled, rough chop (I suggest a sweet variety)
  • 1 Clove of Garlic- peeled and rough chop
  • 2 Tbsp Soy
  • 1/4 c  Rice Vinegar
  • 1 Tbsp Sugar
  • 1 Tbsp  Sesame paste (same as Tahini)
  • 1 c Grapeseed oil (or another mild tasting oil such as sunflower)

Put all in blender, pulse on medium high. Don't liquify the dressing. You want it to be slightly chunky.

For salad:

  • 8 oz. Iceberg Lettuce, cored and chopped
  • 4 oz. Romaine Lettuce, cored and chopped
  • 4 oz. Red Cabbage, cored and sliced thin
  • 4 oz. Bean Sprouts
  • 2 oz. Green Onions, chopped
  • 8 oz. vegan chicken (such as Quorn Chiquin patties or Gardein ultimate Chick'n Tenders), cooked in air fryer or oven as directed, chopped into small 1/2" chunks. (Quorn is mostly mushroom and the healthier choice)
  • 16 oz can of Mandarin Orange Segments
  • 4 oz. Crispy Rice Noodles if available (not uncooked rice noodles!)
  • 4 oz. Crispy Won Ton Strips
  • 4 oz. Almonds, toasted and chopped
  • 2 tsps. Sesame Seeds
  • 2 ea. Snow Peas optional

Instructions

  1. Place all of the ingredients into a mixing bowl.
  2. Toss the ingredients with dressing  until evenly combined. (If you don't plan to eat the entire amount, separate out dry ingredients and add dressing later).
  3. Mound the ingredients into a large serving bowls.
  4. Place the mandarin orange segments around the salad.
  5. Top the salad with a little more crispy rice noodles and won tons.
  6. Sprinkle almonds and sesame seeds over the salad
