Farro Salad with Arugula and Walnuts
It doesn't get any tastier and healthier- for you and the planet, especially if you choose vegan feta!

Ingredients
Salad
1 cup dry farro
2 c baby arugula
1 c halved cherry tomatoes
2 green onions- minced
1 red, yellow or orange bell pepper
3/4 c walnut halves or quarters
1/2 c fresh parsley chopped
1/4 c fresh mint chopped
1/4 c fresh dill chopped
Vegan Feta cheese- ad lib-
Dressing
1/4 c fresh lemon juice (usually 2-3 lemons)
1 t dried oregano
1 minced large garlic clove
3/4 t salt
2/3 t pepper
Combine above, then drizzle in
3/4 c olive oil
Instructions
Cook farro in 3 cups of boiling water for 20-40 minutes.
Add all ingredients to warmish farro, toss with dressing.
