Ingredients

· 1 bunch of kale

· 2 tablespoons olive oil

· 2 tablespoons nutritional yeast

· 2 scallions, chopped

· Salt and pepper to taste

Instructions

1. Preheat the Oven: Preheat your oven to 300°F (150°C).

2. Prepare the Kale: Wash the kale leaves thoroughly and dry them completely using a kitchen towel or salad spinner. Remove the tough stems from the kale leaves and tear the leaves into bite-sized pieces.

3. Season the Kale: Place the kale pieces in a large mixing bowl. Drizzle the olive oil over the kale and toss to coat evenly. Sprinkle the nutritional yeast, chopped scallions, salt, and pepper over the kale, and toss again until the kale is evenly coated with the seasonings.

4. Arrange on Baking Sheets: Line a baking sheet with parchment paper or a silicone baking mat. Arrange the seasoned kale pieces on the baking sheet in a single layer, making sure they are not overlapping.

5. Bake: Place the baking sheets in the preheated oven and bake for about 15-20 minutes, or until the kale chips are crisp and beginning to brown around the edges. Keep an eye on them towards the end of the baking time to prevent burning.

6. Cool and Serve
