Ingredients

· 4 medium zucchinis

· 2 tablespoons olive oil

· 3 cloves garlic, minced

· 2 cups heirloom tomatoes, chopped

· 4 cups Swiss chard leaves, chopped

· Salt and pepper to taste

· Grated Parmesan cheese for serving

· Fresh basil leaves for garnish

Instructions

1. Prepare the Zucchini Noodles:

1. Use a spiralizer to create zucchini noodles, or "zoodles", from the zucchinis. If you don't have a spiralizer, you can use a julienne peeler or a sharp knife to cut the zucchinis into thin strips resembling noodles. Set the zoodles aside.

2. Cook the Vegetables:

1. In a large skillet or frying pan, heat the olive oil over medium heat.

2. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.

3. Add the chopped heirloom tomatoes to the skillet and cook for 3-4 minutes, until they start to soften and release their juices.

4. Add the chopped Swiss chard leaves to the skillet and cook for another 2-3 minutes, until the chard is wilted and tender. Season with salt and pepper to taste.

3. Add the Zucchini Noodles:

1. Once the tomatoes and Swiss chard are cooked, add the zucchini noodles to the skillet.

2. Toss the zucchini noodles with the tomato and Swiss chard mixture until everything is well combined and the zoodles are heated through, about 2-3 minutes. Be careful not to overcook the zucchini noodles, as they can become mushy.
