Ingredients

  • 4 regular sized cans of black-eyed peas
  • 2/3 cup white wine vinegar
  • 3/4 cup olive oil
  • 1/2 cup minced red onion
  • 3/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Place drained and rinsed peas in a bowl.
  2. Whip the vinaigrette in the food processor.
  3. Add it to the peas and stir.
  4. Stir in parsley and onion.
  5. Salt and pepper to taste.
