Ingredients
- 3 medium yellow squash, 11”x3”
- I large sweet onion
- 3 c vegetable broth (I use Wegman’s Organic Vegetable Broth Concentrate). You may substitute half of this with unsweetened soy milk.
- 3 T olive oil
- 1 t butter (optional)
Instructions
- Cut the squash and onion into 1 in. chunks and add them to the oil and butter warming in the pot.
- Cover and simmer for 15 min.
- Do not brown these vegetables.
- Add broth and simmer until soft.
- Remove pot to the sink and use the immersion blender to puree this mixture. Tilt the pot to puree all of it. The immersion blender makes a much finer puree than a food processor can. Whatever you use to cream this soup, follow safety instructions provided by the manufacturer for pureeing hot liquids.
- You may serve immediately or reheat gently before serving into bowls or mugs.
