Spinach Feta Toasts
We loved having these at a local restaurant. I'm not sure how I managed to get the recipe from the owner, but here it is! I substituted vegan feta and an egg replacer and was very pleased with the results.

Ingredients
- 2 6 oz containers plant-based feta cheese such as Follow Your Heart or regular feta (crumbled or brick ok, plain)
- 8 oz mayo (plant-based- Hellmans or Vegenaise) or regular mayo, also see recipe (mayonnaise)
- 1 egg or plant-based equivalent such as Namaste vegan egg replacer (available on Amazon)
- 10 oz frozen spinach - thawed and fluid squeezed out, or 2 cups of fresh spinach, finely chopped
- Pesto - 3 tbsp
- Garlic - one large clove minced, or about 1 tsp
Instructions
- Mix all of the above
- Dollop generously on diagonally 3/4" sliced French bread
- Bake for 10-15 min at 350 deg
- Top with favorite warmed spaghetti sauce (we love Rao's Marinara)
