Thai Peanut Sauce Recipe
A delicious way to serve up your favorite veggies and serve them over a bed of noodles!

Ingredients
Sauce:
- 1 large clove garlic
- 2 T toasted sesame oil
- 3 T smooth peanut butter or almond butter
- 3 T fresh lime juice, more if needed
- 2 T low sodium tamari or soy sauce
- 1-2 teaspoons sugar
- 2 tsp fresh grated ginger (optional)
Salad:
- 4 oz cooked noodles (Soba, udon, Chinese)
- a 16 oz bag -Cooked edamame
- 1 carrot, julienned
- 1 red bell pepper, diced
- 1/2 seedless English cucumber
- 4 green onions, chopped
- 1/4 c fresh cilantro, chopped
- Sesame seeds, chopped peanuts
- If plant meat is desired, try Quorn Chiqin patties cooked in an air fryer and cubed, or Meati classic or crispy chicken, or your favorite plant chicken
Instructions
Cook noodles as directed. After rinsed under cold water and drained, toss with a bit of EVOO to prevent them from sticking together.
Add veggies, sauce, and toss.
